To Marinate
Whole chicken skinless- cut in 12 pieces.
Plain dahi-200 gms
Turmeric powder-1 tb sp
Ginger paste-2tb sp
Garlic paste-2 tb sp
Chilly powder-2 tb sp
Salt to taste
Kastooree methi- handful
Desi ghee-2 tb sp
METHOD
Take a container and mix all above ingredients well and keep in fridge for at least six hours to get the authentic taste.
INGREDIENTS
Basmati rice-500 gms wash and soak 15-20 mins before cooking.Boil and keep ready.
Fresh coriander chopped a cup
Biryani masala(Shan)-3-4 tb sp
Cinnamon sticks-2-3
Cloves-10-12
Black pepper whole-10-15
Green cardamom-5-6
Black cardamom-3-4
Bay leaves-4-5
Ghee-7-8 tb sp
Onion sliced-200 gms
Saffron soak in milk
METHOD
Take a open vessel with good diameter.Add the marinated chicken to it and cook till you get all masalas cooked well with chicken.
Take another pan and add ghee with onions and all whole masalas mix till golden brown.
Add this to the chicken and cover for 15-20 mins till chicken gets tender.
Add boiled rice to it with saffron threads soaked in milk.
Now gently mix them add fresh coriander and serve with onion raita.
GARNISH
Onion sliced fried well dark colour.
Sliced tomatoes
Boiled eggs cut in halves
Spread on biryani
ONION RAITA
Dahi-250 gms
Red onion big fine chopped
Fresh coriander handful fine chopped
Salt to taste
Roasted jeera powder-1 tb sp
Green chilly fine chopped-3-5
Beat dahi well and mix all ingredients together and enjoy with biryani
